Ms Walter’s real life experience has taught her that, knowledge and skill about plant based nutrition is very valuable for modern chefs. Through her own cooking experiences, she values creating beautiful and tasty food. The Raw Vegan Culinary course is designed to teach anyone about all aspects of Raw Vegan Nutrition and culinary techniques, from a culinary novice, to an experienced traditional chef.

 

The Raw Vegan Culinary Course

The course is divided into 36 lessons, that cover: raw/vegan ethics, nutrition, ingredients, equipment & tools, cleanses, food allergies, and recipe development.

The course covers kitchen skills and techniques specific to a raw plant based diet, such as soaking, juicing, sprouting, fermenting, and dehydrating. You have the opportunity to create your own recipes, using the skills and techniques taught in the course. Chefs, who have had a traditional culinary training, are introduced to techniques and methods that are specific to a raw plant based diet.

Raw Vegan foods are more than crunchy salads. Clearly defined with goals, the course teaches you about combining different flavors and textures. Specific attention is placed on ingredient selection, taste, food texture, and plate presentation. Chefs may gain an additional understanding of how to create nutrient-dense, tasty, and beautiful, raw and cooked plant based foods.

 

What is Raw Vegan?

Most times when the word Vegan is mentioned, conversations can quickly become heated with many different interpretations and takes on the lifestyle.

Our course focuses primarily on the nutritional aspect of a plant based/vegan diet. You learn about the environmental and ethical aspects of such diet, its nutritional value, and are encouraged to develop your own opinion about why it is important. You also learn how to replace traditional ingredients to make any type of raw vegan food.

Both, classic and modern culinary techniques, are taught, and you are encouraged to be creative in how you prepare and present food. The curriculum addresses the way modern lifestyles have redefined the way people eat, and encourages you to meet the challenges people face day to day.

 

How the Program Works

Each lesson has a specific topic, with clearly defined learning goals. You read and research assigned materials, and complete assignments. The course is very hands on, with you developing menus, recipes, and creating a large variety of foods from week to week.

You learn about food supply, safety and sanitation, and how to deal with food allergies and sensitivities. You also get to create menus and test recipes, while considering food cost and labor skill needed to prepare foods. Depending on the topic, you may submit written assignments, or gain hands on experience by making foods complete with recipes, instructions, and a photo essay. For the Novice or Advanced Chef

The course is designed to introduce you to a cooking/food preparation skill or method, and then to let you explore the skill and method at your level.

For instance, while studying fermentation, you are introduced to what the method is, how it works, what it does to food, and then given an opportunity to ferment foods. You can create your own fermentation recipe and record the process with words and pictures.

Depending on your skill level, you can make any type of fermented food that you like, i.e. beer, wine, vinegar, yogurt or sauerkraut, to name a few. The information in the course is presented clearly and simply. Students are encouraged to study the material, apply the skills and methods, and draw their own conclusions about culinary skills and methods as they apply them.
