When Lucy, founder of The Raw Food Institute of Australia, started working with raw food in 2008, it was almost unheard of in the general population. There certainly weren’t any cafes or restaurants that specialized in it in Australia. So, Lucy had to travel overseas to find places she could do courses, eat the food, and experience the health benefits.

When she brought home her knowledge and used it to open her little café in her country town, it went crazy. People realized they actually liked the flavor of a wholesome, delicious meal, and they loved the feeling after they ate. No more heavy, sleepy feelings after a good meal! Lucy and her team were standing room only on weekends.
