This recipe for Raw Cheesey Scramble is a variation on a dish I learnt, when I studied at Planet Raw in LA. Juliano is the owner/chef… crazy dude, amazing chef!
Raw Cheesey Scramble

Ingredients
- 1/2 cup soaked cashews
- 1 clove garlic
- 1/4 teaspoon celtic sea salt
- pepper to taste
- 1 tablespoon savoury yeast,(or more if you like strong cheese flavour)
- 1 diced spring onion
- 2 tablespoons chopped Italian parsley
- 1/2 teaspoon turmeric
- 1 cob of corn, (corn kernels removed from cob)
- 2 cups cauliflower roughly chopped
- 3/4 cup water
- 1 tablespoon really yummy olive oil
Instructions
- Blend cashews, garlic, salt, pepper, ,turmeric, oil and half the water in high speed blender. Slowly add more water if needed, until you have to consistency of thick cream.
- Place cauliflower in food processor and pulse until the size of cooked rice grains. transfer to large mixing bowl. Add corn kernels, shallots and parsley and mix together. Add nut cream mix and stir thoroughly. Stir nutritional yeast in. Taste and add more yeast, salt and pepper if needed.
Notes
If you have a Thermomix, this can all be done using the same bowl. I made the cauliflower rice first, then using the same bowl, made the savoury nut cream
