Raw Pumpkin, Onion and Chia Seed loaf
(makes approx. 15 slices)
I was thrilled when one of my favourite chefs and people agreed to contribute one of her favourite recipes to the Raw Food Institute of Australia. She dropped into my home and shared my kitchen for the morning. What a talent! Jules McKie aka the food ferret has the most amazing ability for pulling together ingredients and coming up with some magic.
I measured and weighed, (not very accurately I might add!) while Jules prepared to create this amazing loaf. If you love your bread but dont want to be eating cooked bread this is the answer. And don’t be shy, if you want to change the flavour, leave out the onion and add some herbs…let your imagination play. And don’t forget our tip if you are new to Raw Food and don’t have a dehydrator. Turn the oven on low, leave the oven door ajar and turn the bread regularly. It wont be guaranteed raw, but its a great way to experiment before you invest in a dehydrator…
- 500g pumpkin
- 225g green cabbage
- 200g onions
- 425g sunflower seeds
- 175g golden flaxseeds
- 100g psyllium husk
- 40g chia seeds
- 210ml spring water
- 1-2 T macrobiotic sea-salt or Himalayan crystal salt
- Roughly grind sunflower seeds in a food processor and transfer to a large bowl.
- Grind flaxseeds into meal consistency and add to bowl with sunflower seeds.
- Blend pumpkin, green cabbage and onions to a pulpy consistency and add to bowl.
- Add chia seeds, psyllium, water and salt to the rest of the ingredients and mix by hand until well combined. Form dough into a loaf shape.
- Sprinkle sesame seeds on top and wrap your loaf tight in plastic wrap.
- Put loaf in the fridge and let it rest there for a minimum of 30 minutes.
- Cut loaf into 1cm thick slices.
- Dehydrate (in a dehydrator) for approximately 8-10 hours at 45°C or 113°F.
- Remove from dehydrator.
- Store in sealed container in refrigerator for up to 1 week.
