Ingredients
- 2 cups almonds
- 1 cup raisins
- 1 cup sultanas
- ½ cup sunflower seeds
- ½ cup pepitas
- ¼ cup sesame seeds
- ⅓ cup cacao powder
- 2½ cups pitted and soaked dates
- ½ cup white chocolate recipe
- ⅓ cup dried cranberries

Instructions
- Process nuts, seeds and dried fruit, until finely ground. Place in a bowl
- Process dates to form a paste. Add to bowl with cacao powder and mix well
- On a piece of greased paper flatten out mixture into a square about 1.5cm (1/2in)
- thick. Place another piece of greased paper on top
- Place in fridge overnight to firm up
- Melt the white chocolate in a basin over very warm water and spread a thin layer over
- base. Sprinkle with chopped cranberries Put back in fridge to set chocolate
- Very carefully roll up like a swiss roll and return to fridge for a few hours
- Melt the [url href=”http://therawfoodinstituteofaustralia.com/chocolate-recipes/”]chocolate recipe no. 3[/url]. Place roll on a wire rack and coat in chocolate. The
- log also looks effective if you just drizzle chocolate over the top and let it run down
- the sides
- Set in the fridge
- Decorate and cut into thin slices to serve
