Now this is a classic with a twist…Yule Log. If you really want to impress family and friends this Christmas…check this one out….so much fun to be had in the kitchen

Yule Log
Recipe Type: Dessert

Ingredients
  • 2 cups almonds
  • 1 cup raisins
  • 1 cup sultanas
  • ½ cup sunflower seeds
  • ½ cup pepitas
  • ¼ cup sesame seeds
  • ⅓ cup cacao powder
  • 2½ cups pitted and soaked dates
  • ½ cup white chocolate recipe
  • ⅓ cup dried cranberries
  • 1 cup [url href=”http://therawfoodinstituteofaustralia.com/chocolate-recipes/”]chocolate recipe no. 3[/url]
Instructions
  1. Process nuts, seeds and dried fruit, until finely ground. Place in a bowl
  2. Process dates to form a paste. Add to bowl with cacao powder and mix well
  3. On a piece of greased paper flatten out mixture into a square about 1.5cm (1/2in)
  4. thick. Place another piece of greased paper on top
  5. Place in fridge overnight to firm up
  6. Melt the white chocolate in a basin over very warm water and spread a thin layer over
  7. base. Sprinkle with chopped cranberries Put back in fridge to set chocolate
  8. Very carefully roll up like a swiss roll and return to fridge for a few hours
  9. Melt the [url href=”http://therawfoodinstituteofaustralia.com/chocolate-recipes/”]chocolate recipe no. 3[/url]. Place roll on a wire rack and coat in chocolate. The
  10. log also looks effective if you just drizzle chocolate over the top and let it run down
  11. the sides
  12. Set in the fridge
  13. Decorate and cut into thin slices to serve
