Vegan Dessert – Raw Sweet Potato Raspberry Parfaits with ginger whipped cream

Sometimes creativity is all you need to create an amazing new recipe. This little gem of a Vegan Dessert, created by Raw Chef Student, Yasea Love is just bursting with flavor and is sooo nutritious!

Sweet potatoes are loaded with Vitamin A, C, Manganese, Potassium and fiber.

Add to that cinnamon, which helps control blood sugar levels and is antimicrobial,  Coconut Oil, (I know I don’t need to tell you the health benefits there) and ginger and you have a complete meal in one little Vegan Dessert.

We can have the most fun with Raw Vegan desserts.

They don’t have to take long to prepare and the really fun thing with Raw Desserts is you don’t really make mistakes. OK it may not turn out how you planned but most raw desserts are salvageable! If you add to much liquid, put in more coconut oil or psyllium husks! If its too dry add more fruit juice. As your not baking anything, you have plenty of chances to correct.

But I think you will agree Yasea got this one just right…. We love it and know you will too!

 

 

Sweet Potato Raspberry Parfaits with ginger whipped cream

Ingredients
  • [b]Sweet Potato Puree:[/b]
  • 3 cups sweet potato peeled chopped
  • 1/4 cup filtered water
  • 1 TBs cinnamon
  • half nutmeg grounded
  • 1 TBs mable syrup or sweeter of choice
  • pinch himalayan salt[br]
  • [b]Ginger Whipped cream:[/b]
  • 1 cup cashews soaked , rinsed ,drained
  • 1 cup filtered water
  • 1/2 cup coconut oil , melted
  • 3 TBs grated ginger
  • 2 TBs table syrup or sweetener of choice
  • pinch himalayan salt[br]
  • [b]Raspberry layer:[/b]
  • 1 1/2 cups raspberries (if frozen thaw)
  • 1/4 cup table syrup
Instructions
[b]Sweet Potato Puree:[/b]
  1. Place sweet potato, cinnamon ,nutmeg, salt in food processor blend to a puree mix adding water as you go.[br]
[b]Ginger Whipped cream:[/b]
  1. Place all ingredients in food processor and blend to creamy texture .
  2. Then place in bowl and chill until set.[br]
[b]Raspberry layer:[/b]
  1. Place all ingredients into food processor and process until puree , can leave it a bit chunky your choice .[br]
[b]Assembly:[/b]
  1. In a parfait glass , place a layer of the sweet potato puree, a layer of the raspberry puree , a layer of ginger whipped cream , then a sprinkle layer of walnuts, then repeat layers , add walnuts as topping . made with great Love
Notes
For grounding l always grind by hand my spices n herbs as it feels so good to do and you really smell the spices.
