Hows this for a bit of fun for Christmas or should I say, Snowy Christmas!….I just love this time of year, any excuse to get in the kitchen and have a play…pizza bases and crackers dehydrating, cakes every where, and any other tasty nibbles I can think of…not your regular Christmas Aussie feast…better!!
Snowy Christmas

Ingredients
- 1 cup desiccated (fine) coconut
- ½ tsp vanilla extract
- ¼ cup coconut oil – melted
- ⅛ cup maple syrup
- ¼ cup dried cranberries
- ½ cup brazil nuts
- ½ cup hazelnuts
- ½ cup sultanas
- ½ cup raisins
- ½ cup white chocolate – melted
- pinch salt
Instructions
- Process brazil nuts to a fine powder. Place in a bowl
- Pulse chop hazelnuts, sultanas, raisins and cranberries until chunky. Add to bowl
- Add coconut oil, vanilla, coconut, maple syrup, salt and white chocolate and mix
- until combined
- Press into a cling wrap lined 10cm x 20cm (8in x 4in) container
- Set in fridge overnight
- Cut into small squares
- Store in an airtight container in the fridge
