Raw Fennel Bagel with Cashew Cheese, Mashed Avocado, Sauerkraut and Kale Sprouts, with Blueberry, Fennel and Chia Sauce

Ingredients
  • [b]Bagel [/b]
  • ½ Cup Almonds (soaked overnight)
  • ½ Cup Walnuts (soaked 2 – 4 hours)
  • ½ Cup Cashews (soaked 2 – 4 hours)
  • ½ Cup Sunflower Seeds (soaked 2 – 4 hours)
  • ½ Cup Sultanas (pour boiling water over and soak for 15 minutes)
  • ¾ Cup Flaxseeds
  • 1 Cup Psyllium Husks
  • 1 Garlic Clove, minced
  • 1 TBSP Lemon Juice
  • 1 TBSP roughly chopped Fennel leaves
  • 40 g Green drinking Coconut Flesh
  • ½ tsp Himalayan Salt
  • Water
  • Olive Oil[br][br]
  • [b]Blueberry, Fennel and Chia Sauce[/b]
  • ½ Cup Blueberries
  • Juice of ½ Lemon
  • ⅛ Fennel Bulb
  • Pinch Himalayan Salt
  • 2 TBSP Chia Seeds[br][br]
  • [b]Cashew Cheese[/b] – this recipe was taken from the Kind Living Kitchen Book
  • To construct the Bagel you will need:
  • 1 Bagel
  • ½ Avocado, mashed
  • ¾ Cup Rocket
  • ½ Carrot, spiralised
  • 3 Cherry Tomatoes
  • 2 TBSP Kale sprouts
  • 1 TBSP Sauerkraut
  • 3 Slices Cashew Cheese
Instructions
[b]Bagel [/b]
  1. Soak nuts in cold water. Rinse and drain.
  2. Place the Flaxseeds in a blender, and blend into flour. Set aside in a bowl.
  3. Blend Almonds, Walnuts, Cashews, Sunflower seeds and Sultanas until they resemble a paste. Water can be added a little at a time to get a paste consistency.
  4. Add the Flaxseed flour, Psyllium Husks, minced Garlic, Lemon Juice, Fennel, Coconut flesh and Salt. Add two cups of water. Blend using the processor until well combined.
  5. Shape into 6 bagels. Brush with Olive oil.
  6. Place on a dehydrator sheet and dehydrate at 46 °C (115 °F) for 12 hours.[br][br]
[b]Blueberry, Fennel and Chia Sauce[/b]
  1. Place ingredients, except Chia seeds, into a blender and blend until smooth. Stir in Chia seeds and stand for 20 minutes to thicken.[br][br]
[b]Cashew Cheese[/b]
  1. Cut the Bagel in half.
  2. Mash the Avocado and place onto the Bagel base.
  3. Top with Rocket, Carrot, Tomatoes, Sprouts, Sauerkraut and cheese.
  4. Put the top half of the Bagel on top of the stack.
  5. Place 1 TBSP of the sauce next to the Bagel.
