Do you remember Coconut Rough’s from when you were a kid?
They used to be one of my favourite treats. (Before I knew better and I was a kid of course!)
Yesterday was one of those days…cleaning out the garage, working in the veggie garden and generally catching up now this amazing Spring weather is here. I just couldn’t stop thinking about Coconut rough’s while I was working…hmm guess I was a little hungry!
So I thought Id have a play with a recipe and see what I could come up with. It worked a treat and now we have lots of these little gems sitting in our fridge for this weeks nibbles!
So quick and easy, have a go and see what you think:
Raw Coconut Rough

Ingredients
- 1/2 cup coconut oil
- 1/2 cup cacao powder
- 1/2 cup shredded coconut
- 1/2 cup of almond butter or ground almonds
- 1/4 cup maple syrup (or agave if you dont use Maple syrup)
- 1/2 teaspoon vanilla essence
Instructions
- Melt the coconut oil and pour into a mixing bowl, add all the other ingredients and mix thoroughly. Spoon into cupcake trays, each one being about 1 inch thick and place in freezer for approx 1 hour. Then pop the individual roughs out and place in sealable lunch box in the fridge until you want to eat them… now try and make them last the week!
