Raw Cappuccino Cream Pie

Raw Cappuccino Cream Pie

When we owned the cafe, I made all the raw cakes and we couldn’t keep up with demand, this along with the key lime pie was by far the most popular… enjoy!!

Raw Cappuccino Cream Pie

Ingredients
  • Base ingredients:
  • 2 cups raw cashews
  • 1 cup raw macadamia nuts
  • 1 ½ cups pitted dates (roughly chopped)
  • 1 tsp vanilla essence
  • Pinch salt
  • Filling ingredients:
  • 2 avocados
  • 1 cup nut milk (cashew or almond)
  • 1 cup freshly brewed espresso coffee
  • 2 cups soaked raw cashews
  • 1 cup raw honey or agave
  • 3 tbsp vanilla essence
  • 2 pinches fine sea salt
  • 1 cup melted cacao butter (chop butter and place in a bowl sitting in hot water until melted)
  • 4 tbsp lecithin
Instructions
Base ingredients:
  1. Place nuts in a blender and blitz into a fine crumb.
  2. Add all other ingredients and blend until dates are cut into small pieces and the mix sticks together well.
  3. Grease an 8 inch spring form tin with coconut oil and then evenly press the mix onto the base and sides of the tin.
Filling ingredients:
  1. Place all ingredients (except cacao butter and lecithin) into a blender and mix on high until you have a smooth, creamy mixture.
  2. Add cacao butter and lecithin and mix on high again until lecithin has completely dissolved.
  3. Pour mixture into the base then hold tin tightly and with 2 hands knock the tin on the counter top to release any air bubbles.
  4. Smooth the top with a spatula and place into your freezer to set (takes approximately 2 hours).
  5. Once set, take out of the tin and cut while frozen.
  6. Decorate the top of the cake with finely ground coffee and roasted coffee beans and allow to defrost for approximately 20 minutes before serving.
