Poached Pears

Ingredients
- 5 Pears
- 1 Lemon, including its rind
- 2 cups Coconut Sugar
- 2 cups Raspberries, frozen
- 2 TBSP Vanilla Essence Water
Instructions
- Using a melon baller and starting from the bottom, cut out the core and peel the skin off.
- Place 4 cups of water in a saucepan over medium-high heat and add vanilla, lemon juice, rind, raspberries and coconut sugar.
- Bring to the boil and then reduce heat to medium-low.
- Place pears in the saucepan and put a plate on top of the pears so the pears are kept under water at all times. If needed, you can add more water to ensure the pears are completely underwater.
- Simmer for about 25 minutes or until cooked.
- Allow the pears to cool in the liquid, then drain and decorate or serve as-is with coconut cream or ice cream and raspberries.
Notes
The pears tasted very nice cooked but still a little bit of firm and the colour socked in about 1/3 of the way. I decorated it with a Christmas look in mind and, well, I love vegan chocolate and raspberries.
