Kale Salad with Mulberry Vinaigrette

Ingredients
- 1 bunch Kale
- 1 fresh cob of corn
- 1 tomato
- 1/2 avocado
- 1 cup fresh mulberries
- 1/4 cup apple cider vinegar
- 1 tablespoon good quality olive oil.
- Dash of agave nectar
Instructions
- Strip and finely slice Kale. Place in large salad bowl.
- Chop tomato, avocado and corn and add to bowl.
- Mix all the above ingredients in the bowl together .
- In blender place Mulberries, apple cider vinegar, olive oil and agave, blend for 1 minute.
- Check balance of flavours to make sure its what you prefer and pour generously over salad. Serve and enjoy..
