Poached Pears

Ingredients
  • 5 Pears
  • 1 Lemon, including its rind
  • 2 cups Coconut Sugar
  • 2 cups Raspberries, frozen
  • 2 TBSP Vanilla Essence Water
Instructions
  1. Using a melon baller and starting from the bottom, cut out the core and peel the skin off.
  2. Place 4 cups of water in a saucepan over medium-high heat and add vanilla, lemon juice, rind, raspberries and coconut sugar.
  3. Bring to the boil and then reduce heat to medium-low.
  4. Place pears in the saucepan and put a plate on top of the pears so the pears are kept under water at all times. If needed, you can add more water to ensure the pears are completely underwater.
  5. Simmer for about 25 minutes or until cooked.
  6. Allow the pears to cool in the liquid, then drain and decorate or serve as-is with coconut cream or ice cream and raspberries.
Notes
The pears tasted very nice cooked but still a little bit of firm and the colour socked in about ⅓ of the way. I decorated it with a Christmas look in mind and, well, I love vegan chocolate and raspberries.
