2 Minute Cucumber Rounds

Ingredients
  • 1 Lebanese cucumber
  • ¼ avocado mashed
  • 6 sun dried tomatoes
  • 6 caper berries (or capers if caper berries aren’t available)
Instructions
  1. Slice cucumber into thick rounds (you’ll need 6 for this recipe). Top each with a teaspoon of mashed avocado, a sun dried tomato and a caper berry.
Notes
This is a simple 2 minute snack, that could be made with any ingredients you have in the fridge: think cucumber rounds with sliced tomato and nut cheese sauce or sprouted almond hummus and cracked pepper.
