Ingredients
  • 1 cup desiccated (fine) coconut
  • ½ tsp vanilla extract
  • ¼ cup coconut oil - melted
  • ⅛ cup maple syrup
  • ¼ cup dried cranberries
  • ½ cup brazil nuts
  • ½ cup hazelnuts
  • ½ cup sultanas
  • ½ cup raisins
  • ½ cup white chocolate - melted
  • pinch salt
Instructions
  1. Process brazil nuts to a fine powder. Place in a bowl
  2. Pulse chop hazelnuts, sultanas, raisins and cranberries until chunky. Add to bowl
  3. Add coconut oil, vanilla, coconut, maple syrup, salt and white chocolate and mix
  4. until combined
  5. Press into a cling wrap lined 10cm x 20cm (8in x 4in) container
  6. Set in fridge overnight
  7. Cut into small squares
  8. Store in an airtight container in the fridge
