Chocolate Sushi Surprise

Chocolate Sushi Surprise

Raw Vegan Culinary Course
Ingredients
  • Two Sheets of Organic Raw Nori[br][br]
  • Coconut/Nut Rice
  • 1 cup of Cashews, soaked and dehydrated
  • 1 cup of Desiccated Coconut
  • 1 cup of Macadamias
  • 1/2 cup of Lemon Juice
  • 1/2 cup of Coconut Oil
  • 1/4 cup of Maple Syrup
  • 2 tsp of Vanilla Paste
  • 1/4 tsp Salt (Himalayan Pink Rock)[br][br]
  • Chocolate Mousse and Fruit Filling
  • 1 Kiwi Fruit, sliced thinly
  • 1/2 Banana
  • 1/2 Avocado
  • 1/2 Orange, segmented
  • 3 TBSP Cacao Powder
  • 1 TBSP Coconut Oil
  • 1 TBSP Maple Syrup
  • 2 TBSP Orange Juice, freshly squeezed
  • Pinch of Salt (Himalayan Pink Rock)
Instructions
Coconut/Nut Rice
  1. Place cashews and macadamias into Food Processor and process until small and crumbly.
  2. Add all other ingredients and process again until mixed.[br][br]
Chocolate Mousse and Fruit Filling
  1. Place all ingredients apart from orange and kiwi segments into Food Processor and process until smooth consistency.[br][br]
Assembly
  1. Place nori sheets onto 2 bamboo rolling mats, or kitchen bench if you don’t have mats.
  2. Evenly spread coconut/nut rice on nori sheets with a spatula, but leave a small area at the end of the sheet empty. (Google Nori rolling if you haven’t done this before)
  3. Place chocolate mousse filling on top of the coconut rice, filling only 1/3 of the sheet.
  4. Place the segmented pieces of kiwi and orange down the middle of the Chocolate Mousse.
  5. Make sure the filling end of the nori sheet is close to you and then gently, but firmly, pick up the end of the sheet and begin rolling with even pressure.
  6. Because the fillings are moist, the nori sheet ends should easily stick together, but you can also add a couple of drops of water to the end.
  7. Once you have rolled the sushi, place in fridge for 30 minutes.
  8. Then, take out and slice with a very sharp knife into bite size pieces.
  9. Serve with left over chocolate mousse for dipping and extra pieces of orange for palate cleansing.
Notes

This recipe was inspired by my 7 year old daughter asking for Chocolate Sushi, so it may be suited more for children. Can be stored in refrigerator or freezer until ready to be served. Depending on how thin or thick you slice the Nori Rolls into pieces, and depending on your sweet tooth (and your families/friends), this recipe could make 20 or more bite sized servings.
