Chocolate, Pistachio, and Toffee Cups

I know it’s a sometimes food, but this is just one of my favourite chocolate recipes:

Chocolate, Pistachio and Toffee Cups

Follow the recipe and method for [url href=”/chocolate-fixes-things/”]Basic Raw Chocolate[/url][br][br] But instead of just filling the mould with extra chocolate, try this yummy Raw Chocolate, Pistachio and toffee cups variation:
Ingredients
  • 1 1/4 cup pitted dates, soaked for 2 hours
  • 1/4 cup raw cashews soaked min 2 hours
  • 1 cup almond milk
  • 1 Tbsp. coconut oil
  • 2 Tbsp. maple syrup
  • 2 tsp. vanilla extract
  • 1/4 tsp. sea salt
  • *This will make a large quantity, but it can be frozen, or used as sauce over sliced apples, banana or Raw Ice cream.
Instructions
  1. Soak your dates and cashews.
  2. Once your dates and cashews are properly soaked,place all the ingredients in a high-speed blender (or thermomix) and blend until very smooth.
  3. Follow the first step in basic Chocolate making, putting a small amount of chocolate to line the chocolate mould.
  4. Once the first step in the chocolate making is done, place pistachio nuts (2-3 depending on size of individual chocolate moulds) and cover with “toffee” leaving a small amount of room to cover with chocolate to seal in the “toffee” and nuts in the middle.
  5. Place in freezer for 20 minutes,
  6. Remove from freezer and cover top (will become the bottom) of the chocolate mould with melted raw chocolate. Make sure you completely seal it with the chocolate to stop your toffee leaking out when its complete!
  7. Place in freezer for 20 minutes. Remove from the freezer, gently pop from Mould, place your chocolates in a re-sealable container and place in fridge until ready to eat! As this chocolate is not tempered, it will need to be stored in the fridge.
Notes
** You can replace pistachios with walnuts for a wonderful variation
