Chocolate Fixes Most Things!

Raw Chocolate is such a delightful indulgent, guilt free treat..

I think it’s true, chocolate fixes most things. But instead of the guilt after the indulgence, why not just make your own beautiful organic raw chocolates (they keep in the freezer, so you can make bulk!).

I was going to a friends house for lunch and as always, she said, ‘just bring yourself”. As if, what a great excuse to get in the kitchen and have a play.

Raw Chocolates are super simple to make, have a play and you’ll see what I mean.

You will need chocolate moulds or foils, or a mix of both to add variety.

Have all the fillers ready to go as the chocolate sets quite quickly.

Basic Chocolate Recipe

Ingredients
  • 1 cup cacao butter
  • 1 tspn vanilla essence or one vanilla bean scraped
  • 1/2 cup coconut sugar (ground fine in coffer grinder)
  • 1/4 cup agave nectar
  • 1/4 teaspoon salt
  • 1/3 cup cacao powder
Instructions
  1. Grind cacao butter into powder for easy melting (I use my thermomix, but a food processor will do the same job)
  2. Melt cacao butter by placing in bowl over another bowl of boiling water.
  3. add melted cacao butter and vanilla to blender or food processor and blend on high for 30 seconds
  4. add salt, agave nectar and coconut sugar and blend on high for 45 seconds to 90 seconds depending on the strength of your blender
  5. add cacao powder and blend on low until mixed well
  6. pour into wide bowl for easy use.
  7. If the chocolate starts to set while you are using it, place the bowl of chocolate over bowl of hot water for a few minutes
Notes
At his point you can let your imagination play. I always start with beautiful organic strawberries, (if they are in season) and dip a punnet of them, one at a time in the chocolate, such a simple idea with such appeal. Just lay them on a plate to set in the fridge.[br][br]To create beautiful chocolates:[br][br]Pour a small amount of melted chocolate in the bottom of each of the moulds and put in the freezer for 10 minutes to set. (I use silicon moulds which dont need to be greased, but, depending on what your moulds are made from, you may need to grease with coconut oil before you pour chocolate into the moulds.)[br][br]Remove the moulds from the freezer and add pistachios, cherries, cranberries, or nuts, only addd a few per mould depending on the size of your mould, you need to be able to add more chocolate yet![br][br]Spoon liquid chocolate into each mould until it is full. Make sure the top (which will become the base) is flat. Place in the freezer for 20 minutes then move to the fridge. Leave to set fully for 2 hours, then remove from the moulds and place carefully in re-sealable container.[br][br]It is best not to stack them on top of each other as that can damage the shape of your chocolates.[br][br] * For another variation, add edible organic or wild harvested essential oils. Just take a small amount of the melted chocolate out of the main bowl, place in a smaller bowl and add 1 drop of peppermint, orange, lavender or mandarin.
