Chipotle Cheese Sauce

This is a wonderful sauce to use on all sorts of things. It makes a great base (or topping) for a raw pizza. We use it on Salads, in Nori’s and of course if you’re eating the cooked Kofta’s at any time, it makes a great topping over the tomato sauce.

Chipotle Cheese Sauce

Ingredients
  • 2 cups cashew nuts (soaked)
  • 1 ½ cups water
  • 1 tspn celtic sea salt
  • 2 cloves garlic
  • 1 large mild chilli
  • Juice of one lemon
  • 3 Roma tomatoes – (try using sundried if you can get organic ones.)
  • ¼ cup virgin olive oil
  • Organic smoked paprika powder.
Instructions
  1. Place all ingredients except olive oil in a blender and blitz until all ingredients are chopped and well combined.
  2. While the blender is running slowly drizzle in olive oil until the mix is a smooth consistency. Place in a sealed container and store in the fridge for up to 4 days.
