Brigadeiros

- Raw Version
- 8 Medjool Dates, pitted
- 6 tsp Cocoa Powder
- 2 tsp Coconut Oil
- ¼ tsp Vanilla Essence[br][br]
- Vegan Version
- 3 TBSP Cocoa Powder
- 3 TBSP Coconut Oil
- 1 cup Chickpea Flour
- 1 cup Coconut Milk
- ½ cup Coconut Sugar
Instructions
Raw Version
- In a small processor, add the dates, the cocoa powder, the coconut oil and the vanilla essence.
- Use the PULSE button until well combined and smooth texture.
- Take small amounts of the mixture and make some small balls. Finish as you wish.
- Put in the fridge (optional) and it is ready!![br][br]
Vegan Version
- Add the coconut oil to a hot sauce pan.
- After the coconut oil melted, add the chickpea flour and mix gently with a spatula, enough to absorb the oil but without turning the mix into a dough.
- After 5 minutes, when the flour begins to turn golden brown, add the coconut sugar, the cocoa powder, and mix quickly.
- Add the coconut milk and mix until it doesn’t stick to the spatula (about another 5 minutes).
- Ready! Let it cool down to room temperature. Take small amounts of the mixture and make small balls. Coat them as desired (grated coconut, cocoa powder, granulated chocolate, walnuts or crushed almonds).
Notes
During the course, I wanted to create Brazilian dishes, and one of the famous dishes in Brazil is called BRIGADEIRO. I couldn`t find anything healthy without changing the flavour.
[br][br] I tried traditional vegan recipes. Basically, you have to cook a plant based milk with refined sugar for 40 minutes and then use this “condensed milk” to create a vegan brigadeiro. The taste is really similar, really nice, but this recipe requires a lot of refined sugar, which is not healthy at all.
[br][br] I also tried healthy brigadeiros recipes, but all of them tasted somewhat different and not even close to a real brigadeiro!
