Brazil Nut Parmesan Recipe – Finally!

Brazil Nut Parmesan Recipe – Finally!

When we had the cafe, one of our most closely guarded secrets was our Brazil Nut Parmesan.

It just added that certain snap to whatever recipes we used it with.

Our most popular breakfast dish, avocado, baby spinach, tomato and Brazil nut parmesan, drizzled with local balsamic reduction, was completely enhanced with the Brazil Nut Parmesan. You can make this completely Raw by using raw bread, or crackers, instead of bread. It was one of our transitional dishes at the café, so we stuck to bread!

Brazil Nut Parmesan

We were asked every day of the week how to make this recipe, but as we sold it pre-made and it added so much to any dish, we kept that one close. Hey, a girl’s got to have some secrets!

People tried to guess what spices we added, how to create the amazing cheesy flavor. It was quite a fun game!

Well, with Kind Living Cafe officially closed for business, it’s time to share this little gem with you. You are going to laugh when I share it with you. In fact, it’s not even worth putting it in our little recipe format we normally use!

Just three simple ingredients: are you ready …

• 300 grams Brazil Nuts zapped in the food processor until chunky

• 3 tablespoons Nutritional Yeast

• 2 teaspoons Celtic Sea Salt

Blend for a few seconds until all mixed up, and enjoy!

See? I told you that was it!

I have discussed the importance of B12 in a Vegans diet, and refer to Nutritional Yeast as a good source. If you ever get concerned about your B12 levels, I do recommend you get tested, and always keep in mind we store B12 in our bodies for a long time. So, depending on how long you have been a Vegan, can make a big difference on your B12 levels. 

I love Nutritional Yeast, and I know there’s some controversy around it, but keep in mind it’s not a food you will eat every day, so it goes into a ‘sometimes’ food for me. But it has such a wonderful flavor, especially if you struggle to give up cheese. That subtle little addiction that keeps so many people from crossing the line from Vegetarianism to Veganism. I won’t get on my animal rights platform here, but as far as I’m concerned, if it helps people transition away from dairy, it’s a good thing!

Here’s another recipe I use it in. Great way to replace scrambled eggs! 

So, have fun playing with the Brazil Nut Parmesan. Kids love it, and so do omnivores!!
