Basic solid raw cheese recipe

I was shown this recipe years ago, by a very dear friend in the States, long before I even realized the value of raw food…so simple and so tasty…people are surprised that it’s not dairy….

Basic solid raw cheese recipe

Ingredients
  • 2 cups cashews soaked 2 hours
  • 1 cup water
  • 1 teaspoon probiotics
  • 1/2 teaspoon of turmeric
  • 1 tspn of salt
  • 2 tspns of nutritional yeast.
Instructions
  1. Place the ingredients in a high speed blender and blend until smooth.
  2. Pour the ingredients into a nut bag and place in a strainer with a weight on top to press out excess liquid (not too heavy or the cheese will be forced through as well) and leave for 24 hours.
  3. After 24 hours blend the contents of the nut bag with: 1 tspn of salt, 2 tspns of nutritional yeast.
  4. Then scoop the cheese mix into a metal mould or large cookie cutter and place in the freezer for 2 hours, remove from freezer and remove mould, place in dehydrator for 12 hours on 45 degrees C.
Notes
This will have the texture of brie. Will last in the fridge for a least one week… ( I dare you to leave it for that long though!!)
