Basic solid raw cheese recipe
I was shown this recipe years ago, by a very dear friend in the States, long before I even realized the value of raw food…so simple and so tasty…people are surprised that it’s not dairy….
Basic solid raw cheese recipe

Ingredients
- 2 cups cashews soaked 2 hours
- 1 cup water
- 1 teaspoon probiotics
- 1/2 teaspoon of turmeric
- 1 tspn of salt
- 2 tspns of nutritional yeast.
Instructions
- Place the ingredients in a high speed blender and blend until smooth.
- Pour the ingredients into a nut bag and place in a strainer with a weight on top to press out excess liquid (not too heavy or the cheese will be forced through as well) and leave for 24 hours.
- After 24 hours blend the contents of the nut bag with: 1 tspn of salt, 2 tspns of nutritional yeast.
- Then scoop the cheese mix into a metal mould or large cookie cutter and place in the freezer for 2 hours, remove from freezer and remove mould, place in dehydrator for 12 hours on 45 degrees C.
Notes
This will have the texture of brie. Will last in the fridge for a least one week… ( I dare you to leave it for that long though!!)
