Avocado Wraps

Avocado Wraps

Raw Vegan Culinary Course
Ingredients
  • Filling
  • 1 Carrot, grated
  • 1 Beetroot, grated
  • ½ cup Kale, chopped
  • ½ cup Sauerkraut
  • ½ cup Alfalfa Sprouts[br][br]
  • Wraps
  • 1 Carrot, small
  • ½ cup Flax Meal
  • 1 cup Water
  • 1 TBSP Cumin
  • 1 tsp Turmeric[br][br]
  • Crispy Broccoli
  • 1 Head of Broccoli
  • 1 Garlic Clove
  • ½ cup Water
  • ¼ cup Cashews (optional)
  • 2 TBSP Tamari Sauce
  • 2 TBSP Nutritional Yeast[br][br]
  • Avocado Sauce
  • 1 Avocado
  • 2 TBSP Lemon Juice
  • Pinch of Sea Salt
Instructions
  1. Prepare the wraps and crispy broccoli the night before.
  2. Once everything is dehydrated, prepare the sauce and the filling.
  3. Take the wraps, spread the avocado sauce, add all vegetables of your choice and roll the wrap very carefully.
  4. Cut in half and put in a plate together with broccoli.
  5. Sprinkle some nutritional yeast over the broccoli.[br][br]
Wraps
  1. Blend all ingredients in a high speed blender till very smooth. You want a pancake batter consistency. Add more water as needed.
  2. Spread wrap batter evenly on dehydrator sheets. Dehydrate at 46°C (115°F) for about 6 hours or until the tops are firm and you can peel the wraps away from the sheets.
  3. Flip the wrap upside down and carefully peel back the sheets. Continue dehydrating another 2h or so checking in on the wraps every so often. You want them to be firm but still flexible.[br][br]
Crispy Broccoli
  1. Cut broccoli into florets and place in a large bowl.
  2. Prepare the sauce by blending the rest of the ingredients. Blend until smooth.
  3. Pour the sauce mixture all over the broccoli florets and mix until well combined.
  4. Place broccoli on a dehydrator sheets and dehydrate at 46°C (115°F) for about 10 to 12 hours. Remove once the chips are dried and crunchy.[br][br]
Avocado Sauce
  1. Mash the avocado and mix it with the lemon juice, and add salt (optional).
Notes
I wanted to create a special dinner for 2, something light, something you can eat without feeling too full and tired.
